Honey Corn Bread

My absolute favorite corn bread EVER! So easy and amazingly delicious fresh out of the oven!
  • 1 cup flour
  • ¾ cup cornmeal
  • 3 tsp baking powder
  • ½ tsp salt
  • 1 egg, beaten
  • ¼ cup honey
  • 2 T butter or margarine, melted
  • 1 cup milk

Sift together flour, cornmeal, baking powder, and salt. In another bowl, combine egg, honey, butter and milk. Add to dry ingredients, stirring just enough to moisten. Pour batter into greased 8” square baking pan. Bake at 400° for 30 minutes. Cool in pan on rack. Serve warm with honey.

Cinnamon Mini Muffins

  • 1 ½ cups flour
  • ½ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground nutmeg
  • ½ tsp ground allspice
  • 1 egg, lightly beaten
  • ½ cup milk
  • ⅓ cup margarine, melted
  • 2 T sugar
  • ½ tsp cinnamon
  • ¼ cup margarine, melted (or less)

In large bowl, combine flour, sugar, baking powder, salt, nutmeg and allspice. Combine egg, milk and 1/3 cup margarine; mix well. Stir into dry ingredients just until moistened. Spoon into greased or paper-lined mini-muffin cups. Bake at 400° for 12-14 minutes or until muffins test done.
For topping, combine sugar and cinnamon. Brush the tops of warm muffins with margarine. Roll in cinnamon-sugar mixture.

Chocolate Muffins

  • ½ cup butter
  • 1 ⅓ cups sugar
  • 3 cups flour
  • ⅔ cup cocoa
  • 2 tsp baking soda
  • ½ tsp salt
  • 2 eggs
  • 2 cups buttermilk
  • 2 cups chocolate chips

Cream together butter and sugar until fluffy. Combine flour, cocoa, baking soda and salt. Add flour mixture, eggs and buttermilk to butter mixture, beating at low speed just until mixed. Stir in chocolate chips. Spoon into muffins tins. Bake at 350 for 15-18 minutes.

Chocolate Chip Mini-Muffins

  • 1 cup sugar
  • ½ cup shortening
  • 2 eggs
  • ½ cup milk
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 ⅓ cups chocolate chips

In large mixing bowl, cream sugar and shortening until fluffy. Add egg, milk and vanilla. Mix well. Combine flour, baking soda, baking powder and salt. Gradually add to creamed mixture. Mix well. Fold in chocolate chips. Spoon about one tablespoon of batter into each greased or paper-lined mini-muffin cup. Bake at 375° for 10-13 minutes. Cool in pan 10 minutes before moving to wire rack.

Banana Wheat Muffins

Very easy to make and delicious!
  • 1 ⅓ cups flour
  • ⅔ cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup mayonnaise
  • ¾ cup sugar
  • 1 cup ripe banana, mashed, 2-3 medium

In a large bowl, combine flours, baking soda and salt. In small bowl, combine mayonnaise, sugar and bananas; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350° for 20-25 minutes or until a toothpick comes out clean. Cook for 5 minutes before removing from pans to wire racks. Serve warm.

Monkey Bread

Watch out – it’s impossible to stop stealing pieces of this treat when it comes out of the oven!
  • 3 tubes buttermilk biscuits
  • ⅓ cup sugar
  • 1 ½ tsp cinnamon
  • 1 ½ sticks butter
  • 1 cup brown sugar

Cut each biscuit into 4 pieces. Mix sugar and ½ tsp cinnamon. Roll each fourth of biscuit in sugar mixture and drop in greased bundt pan. Boil butter, brown sugar and 1 tsp cinnamon 2-3 minutes. Pour over pieces in bundt pan. Bake at 350° for 25 minutes. Let cool 5-10 minutes before edging around pan with knife. Turn upside on plate.

Power Muffins

Great for an afternoon pick-me up or quick breakfast!

  • 1 ½ cups whole wheat flour
  • 1 cup flour
  • ¼ cup wheat germ
  • 2 tsp baking soda
  • ¼ tsp salt
  • 1 cup craisins
  • 1 cup water, hot
  • 2 sticks butter
  • 3 eggs
  • 3 bananas, ripe
  • 1 cup brown sugar
  • 1 cup walnuts
  • 1 tsp vanilla
  • 3 ½ cups oats
  • 1-2 cups chocolate chips

Mix flours, wheat germ, baking soda, and salt. Put raisins in hot water. Let sit 1 minute. Then add to butter, eggs, bananas, brown sugar, walnuts, and vanilla in blender. In bowl, combine oats and chocolate chips. Mix all three parts together and bake at 350° for about 15 minutes.

Note:
Muffins don’t rise at all – make them the size you want them. Double batch barely fits in blender – may want to mix in two parts.
