Pumpkin Bars

Hands down the best pumpkin bars ever – and the frosting is to die for!

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 2 cups sugar
  • 4 eggs
  • 2 cups pumpkin, No. 303 can, 1 can
  • 1 cup oil
  • chopped nuts, optional

Sift dry ingredients including sugar, add slightly beaten eggs, pumpkin and oil. Blend in nuts. Bake in cookie sheet or 2 greased and floured 9×13 pans at 350 for 25 minutes. Spread with Cream Cheese Frosting.

Note: Keeps real well. I have frozen them many times.
