Power Muffins

Great for an afternoon pick-me up or quick breakfast!

  • 1 ½ cups whole wheat flour
  • 1 cup flour
  • ¼ cup wheat germ
  • 2 tsp baking soda
  • ¼ tsp salt
  • 1 cup craisins
  • 1 cup water, hot
  • 2 sticks butter
  • 3 eggs
  • 3 bananas, ripe
  • 1 cup brown sugar
  • 1 cup walnuts
  • 1 tsp vanilla
  • 3 ½ cups oats
  • 1-2 cups chocolate chips

Mix flours, wheat germ, baking soda, and salt. Put raisins in hot water. Let sit 1 minute. Then add to butter, eggs, bananas, brown sugar, walnuts, and vanilla in blender. In bowl, combine oats and chocolate chips. Mix all three parts together and bake at 350° for about 15 minutes.

Muffins don’t rise at all – make them the size you want them. Double batch barely fits in blender – may want to mix in two parts.
