Oatmeal Scotchies

  • 1 ¼ cups flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • 1 cup butter, softened
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3 cups quick or old-fashioned oats, uncooked
  • 2 cups butterscotch chips

Preheat oven to 375°. In small bowl, combine flour, baking soda, salt and cinnamon. In large bowl, beat butter, sugar, brown sugar, eggs and vanilla until creamy. Gradually beat in flour mixture. Stir in oats and butterscotch chips. Drop by tablespoonfuls onto cookie sheets. Bake 7-8 minutes for chewier cookies and 9-10 minutes for crisper cookies. Let stand on cookie sheets 2 minutes.
